Ingredients
- 1 acorn squash - (abt 1 1/2 lbs) deseeded, and cut into 6 wedges
- 2 teaspoons olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon freshly-ground black pepper
- 3/4 cup unsweetened applesauce
- 2 teaspoons butter
- 1/8 teaspoon ground cinnamon
- 1 tablespoon Atkins Sugar Free Pancake Syrup warmed

Preparation
Step 1
Heat oven to 375 degrees. Brush squash with oil and sprinkle with salt and pepper. Place on a jelly roll pan lined with aluminum foil. Bake until squash is fork tender, about 20 minutes.
In a small pot heat the applesauce. Stir in butter and cinnamon; cook 1 minute more.
Serve squash with a dollop of applesauce and a drizzle of syrup.
