Ingredients

    acorn squash - (abt 1 1/2 lbs) deseeded, and cut into 6 wedges

  • 2

    teaspoons olive oil

  • 1/4

    teaspoon salt

  • 1/8

    teaspoon freshly-ground black pepper

  • 3/4

    cup unsweetened applesauce

  • 2

    teaspoons butter

  • 1/8

    teaspoon ground cinnamon

  • 1

    tablespoon Atkins Sugar Free Pancake Syrup warmed

Directions

Heat oven to 375 degrees. Brush squash with oil and sprinkle with salt and pepper. Place on a jelly roll pan lined with aluminum foil. Bake until squash is fork tender, about 20 minutes. In a small pot heat the applesauce. Stir in butter and cinnamon; cook 1 minute more. Serve squash with a dollop of applesauce and a drizzle of syrup. This recipe yields 6 servings.
