Ingredients
- 2 cups cooked small red beans
- or 1 can of chili beans, drained and rinsed
- 1/2 cup vegetable oil
- 1/2 cup red wine vinegar
- 1 teaspoon salt
- 2 Tablespoons sugar
- 1/2 teaspoon black pepper
- 2 Tablespoons warm bacon grease
- 1 cup sliced celery
- 1/2 cup chopped red onion
- 1/2 cup chopped parsley
- 4 slices crisp-cooked and crumbled bacon
Preparation
Step 1
Warm the cooked beans, and in a medium-sized bowl, combine with the vegetable oil, red wine vinegar, salt, pepper, and the warm bacon grease. Cool slightly. Add the celery, red onion, and parsley. Garnish with the crumbled bacon. Cover and marinate 1 hour before serving.
