Instructions for Slow Cooker Lemon Chicken:
1. Get out enough frozen boneless, skinless chicken breasts as your family will eat. For us, that’s about 7, but I have 7 kids, so we eat a lot! If it’s not thawed, you can defrost it in the microwave. Or, you can do what I do, and cook it from frozen.
2. Sprinkle each piece of chicken on the front and back with lemon pepper.
3. Slice a lemon and place one slice over each piece of chicken.
4. Cook on low for 6-8 hours.
Everyone in my family raved over this lemon chicken recipe. It would be great over salad or as a main dish. It would also be easy to prepare as a Crockpot Freezer Meal by slicing the lemons ahead of time and freezing them with the chicken. I plan to cook a whole bag of it up for me and keep individual servings in the freezer so that I can use it on my salads for lunch. I’m in the process of trying to lose weight and love having low carb/high protein recipes to keep me going.
