Plum, Peach or Banana Ice Cream

Ingredients

  • 1 cup fruit cut into bite sized portions
  • 1/2 cup milk
  • 1 egg separated
  • 1/2 cup sugar + 2 T. sugar
  • 1/2 cup whipping cream
  • 1 t. vanilla
  • dash of salt

Preparation

Step 1

Puree 3/4 cup of fruit. Stir in milk. Finely chop remaining fruit and add. Set aside. In separate bowl, beat egg yolk with 1/2 cup of sugar. Beat in whipping cream, vanilla and salt. Add to fruit mixture.

In previously chilled bowl, whip egg white until stiff, gradually beat in remaining 2 T. sugar. Fold egg whites into ice cream mixture.

Freeze 35 minutes.
