Peanut Butter Cream Pie

Ingredients

  • Chocolate Crust:
  • 6 oz semisweet chocolate chips (1 cup)
  • 5 T butter
  • 2 1/2 C crisp rice cereal
  • 1/4 C mini semisweet chocolate chips
  • 1/2 C peanuts (roasted, no salt)
  • Filling:
  • 8 oz cream cheese softened
  • One 14-oz can sweetened condensed milk
  • 3/4 C creamy peanut butter
  • 2 t vanilla extract
  • 1 C heavy cream
  • Topping:
  • 3 oz milk chocolate finely chopped
  • 2 T heavy cream

Preparation

Step 1

Crust: melt chocolate and butter together, stir until smooth. Add in rice cereal and peanuts until completely coated. Set aside to cool to nearly room temp then stir in the mini chips. Press into bottom of pie plate. Chill 30 min.
Filling:
Beat cream cheese until fluffy. Add condensed milk, peanut butter and vanilla. In separate bowl, beat heavy cream until stiff peaks form. Fold the whipped cream into peanut butter mixture. Pour into pie crust.
Topping:
Melt chocolate, until melted. Remove from heat, add cream. Drizzle over the top in decorative patterns.
