Ingredients
- 3 tablespoons slivered almonds
- 1/2 cup olive oil divided
- 1 slice Atkins bread
- 2 garlic cloves
- 1 roasted red pepper patted dry (jarred is fine)
- 1 medium tomato coarsely chopped
- 2 tablespoons Sherry wine vinegar (or red wine vinegar)
- 1/2 teaspoon red pepper flakes

Preparation
Step 1
In a small skillet over medium heat, sauté almonds until golden, about 3 minutes. Place in a food processor. Heat 1 tablespoon olive oil in skillet. Fry bread slice until golden; break into pieces and add to almonds.
Start processor, add garlic, and process until almonds, garlic, and bread are finely chopped. Add red pepper, tomato, vinegar, and red pepper flakes; process until smooth. Add remaining oil in a steady stream; process just until combined.
This recipe yields 8 servings.
