Ingredients

    tablespoons slivered almonds

  • 1/2

    cup olive oil divided

  • 1

    slice Atkins bread

  • 2

    garlic cloves

    roasted red pepper patted dry (jarred is fine)

    medium tomato coarsely chopped

    tablespoons Sherry wine vinegar (or red wine vinegar)

  • 1/2

    teaspoon red pepper flakes

Directions

In a small skillet over medium heat, sauté almonds until golden, about 3 minutes. Place in a food processor. Heat 1 tablespoon olive oil in skillet. Fry bread slice until golden; break into pieces and add to almonds. Start processor, add garlic, and process until almonds, garlic, and bread are finely chopped. Add red pepper, tomato, vinegar, and red pepper flakes; process until smooth. Add remaining oil in a steady stream; process just until combined. This recipe yields 8 servings.
