Ingredients

  • 1/4 c. unsalted butter, divided
  • 1/4 c. packed light brown sugar
  • 3/4 lb canned pineapple rings in juice, 1/4 c. juice reserved
  • 1 large egg
  • 1/4 lb vanilla cake - about 1 scant cup

Preparation

Step 1

Preheat oven to 375
Melt 2 tblsp butter in a 9" round flameproof aluminum pan
over med-low heat - make sure to cover the entire bottom
Sprinkle sugar over top
Place pineapple rings in a single layer in bottom of pan
increase heat to med-high & cook until pineapple caramelizes, flipping once
about 2 min per side - remove pan from heat

Melt remaining 2 tblsp butter on stovetop or microwave in med size bowl
Beat egg w/remaining butter - Add cake mix & reserved pineapple juice
Combine well
Pour batter over pineapple, bake until toothpike comes out clean - 30/35min
Allow cake to cook 15-20 min-loosen sides w/knife & invert cake onto serving plate
