Macadamia Bars

You can substitute 1 1/2 cups chopped walnuts for macadamia nuts. These are moist, chewy and absolutely sinful. Reminds me of chess pie.

Ingredients

  • Crust:
  • 1 c. (2 sticks) butter, softened
  • 2/3 c. sugar
  • 2 c. flour
  • Preheat oven to 350*. Cream butter, sugar and flour in a bowl. Press into a sprayed 9 x 13" baking dish and bake for 20 minutes.
  • Filling:
  • 4 eggs
  • 1 c. flaked coconut
  • 3 c. packed light brown sugar
  • 2 (3.2 oz.) jars macadamia nuts, chopped
  • 1/4 c. flour
  • 1 T. vanilla
  • 1 t. baking powder

Preparation

Step 1

Lightly beat eggs in large bowl and add remaining filling ingredients. Pour over hot, baked crust and bake for an additional 25 - 30 minutes.

Cool completely and cut into small squares or you can cut into larger squares and serve with dip of ice cream. Makes 20 bars.
