Ingredients

  • 3 cups cubed cooked chicken
  • 3 celery ribs, chopped
  • 1/2 cup chopped cucumber
  • 1/2 cup bean sprouts
  • 1/2 cup chopped peanuts
  • 1/2 cup mayonnaise
  • 3 green onions, chopped
  • 1 1/2 tablespoon minced fresh parsley
  • 1 1/2 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 pita breads (6 inches), halved
  • 12 lettuce leaves
  • 12 tomato slices

Preparation

Step 1

In a large bowl, combine the first 11 ingredients.

Line pita halves with lettuce leaves and tomato slices.

Spoon chicken mixture into pitas.
