Ingredients
- 6 medium potatoes
- 1/4 cup finely chopped onion
- 6 strips bacon
- 1/2 cup apple cider vinegar
- 1 1/2 Tbs sugar
- 1 tsp salt
- coarse ground pepper
Preparation
Step 1
Peel potatos & cook in boiling salt water until tender, cube. Season with salt & pepper. Fry bacon until crisp, add to potatoes. Heat onion in bacon fat until partly done, then add vinegar & salt to onion. Heat to boiling point, but don't boil. Pour over potatoes & mix lightly. Serve at once. Keeps well refrigerated & good cold. Also good with sweet potatoes.
