Tex Mex Black Bean Dip

Ingredients

  • 1 15 oz can black beans, drained
  • 1 tsp vegetable oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup shredded monterey jack cheese
  • 1/4 cup chopped fresh cilantro
  • 1 Tbs fresh lime juice
  • 1/2 cup picante
  • 1/2 cup diced tomato
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder

Preparation

Step 1

Place beans in a bowl, mash with a fork & set aside. Heat oil in non-stick skillet over medium heat. Add onion & garlic. Saute 4 minutes. Add beans, tomato, picante, cumin & chili powder. Cook 5 minutes or until thick, stirring constantly. Remove from heat, stir in cheese, cilantro & lime juice. Serve warm or room temperature with tortilla chips.
