Ingredients
- 12 oz penne pasta
- 1 TB olive oil
- 1 lb button mushrooms, quartered
- 1 small red onion, sliced
- 1/2 cup dry white wine or dry vermouth
- Kosher salt and pepper
- 8 oz Brie, cut into 1 inch pieces
- 4 cups baby arugula
Preparation
Step 1
Cook pasta according to package directions. Reserve 1/2 cup pasta water, drain the pasta, and return to the pot.
Meanwhile, heat oil in a large skillet over medium-high heat. Add mushrooms and onion and cook, tossing occasionally, until mushrooms begin to release their juices, 2-3 minutes. Add wine, 1/2 tsp salt, and 1/4 tsp pepper and cook until mushrooms begin to brown, 5-6 minutes.
Toss the pasta with the brie and reserved pasta water until the pasta is coated. Stir in the mushrooms and arugula.
