Pressure Cooker Pork Chop

If you are like me and have a problem with drying out pork chops, this is a recipe you need to try. It is delicious and succulent. The potatoes make it a one pot meal that just needs a good salad to go with it.
Ingredients
- 2 1-inch pork chops
- 2 TBS olive oil
- 1/8 cup chicken stock
- 1 green pepper chopped
- 1 onion,chopped
- 1/2 cup red wine
- 2 tsp oregano
- 2 tsp basil
- 1/2 tsp rosemary
- Garlic
- pinch red pepper flakes
- 1 14 oz can diced tomatoes and juice
- 2 tsp tomato paste
- 1 medium potato, peeled and thinly sliced
Preparation
Step 1
Sprinkle pork chops with salt and pepper and sear in the pressure cooker in oil. Remove and keep warm.
Deglaze the Cooker with chicken broth to loosen up all those delicious particles left from the pork chops.
Place peppers and onions in the pot and sprinkle with salt, pepper. Cook stirring about 3 minutes. Deglaze with some wine.
Add tomatoes, paste, garlic, oregano, basil, rosemary, pepper flakes.
If potato is added add it now.
Place the pork chops on top of onions, peppers and tomato mix. Cover meat with some of sause.
Pour in wine and chicken broth to add to 12 oz.
Seal the lid and bring up the pressure. Cook on high for 10 minutes. Cook on low for 20 minutes. Release the pressure and remove the lid.
1-2 TBS of arrowroot or cornstarch stirred in to thicken sauce if needed.
You’ll notice that there is seasoning placed between each layer. Do not skip this step as that is what adds flavor to this amazing one pot meal.
