Ingredients
- 1 # White beans, Cannellini or Great Northern
- 2 qts Water
- 3-4 # Smoked ham hocks or shanks
- 2 t Herbes de Provence or Italian seasoning
- 1 T OO
- 1 C Dice onion
- 1 C Chopped celery
- 2/3 C Chopped carrots
- 2-3 Garlic cloves, minced
- Tabasco, salt & pepper to taste

Preparation
Step 1
Bring large pot of water to a boil & add beans. Turn off heat & soak for 2 hours, drain remining water. Meanwhile, cover shanks w 2 quarts of water, add seasonings. Simmer partially covered for about an hour. Saute onions until translulcent, add garlic for 2 minutes. Add to shanks with celery & carrots. Cook for 40 minutes or until vegetables are tender. Remove & discard bones, remove remining meat back to soup. Add tabasco, salt & pepper to taste
