ZUCCHINI - Broiled Zucchini

02/03/15 - This is a quick easy fix for a side veggie and while Dan doesn't adore it, he will eat a serving of it.

Ingredients
- 1 - 2 small zucchini, quartered lengthwise and cut into half-moons (about 1 cup of pieces)
- 2 teaspoons olive oil
- salt and pepper
Preparation
Step 1
Toss ingredients together in a bowl. Pour into a glass baking sheet and broil for 20 minutes or so, until softened and charred in places.
You could add a bit of chopped garlic if you like or a pinch of dried Italian type seasoning or some chopped fresh rosemary and thyme. Also, depending on what you're serving it with, you could add a tablespoon or so of panko/parmesan mixture to the top for the last 5 minutes or so.
