COCONUT BASMATI RICE

Ingredients

  • 3/4 c chicken broth
  • 1/2 c coconut milk
  • 1/2 tsp salt
  • 1/2 c uncooked basmati rice
  • 2-3 chopped green onion
  • 1 tbs chopped fresh cilantro

Preparation

Step 1

1)combine chicken broth, coconut milk, salt and uncooked basmati rice in a medium saucepan. bring to a boil; cover, reduce heat, and simmer 20 minutes or until liquid is absorbed and rice is tender.

2) stir in green onion, cilantro. serve
