Orange Nut Bread

Ingredients

  • 1 stick butter
  • 2 eggs
  • 2 1/2 tsp. baking powder
  • 1/2 C. orange juice
  • 1/2 C. sugar
  • 2 C. flour
  • 1/2 C. honey
  • 1 1/2 C. chopped pecans

Preparation

Step 1

1. Preheat oven to 350 degrees. Put butter into large mixing bowl. With electric mixer set on medium, beat while adding sugar. Continue beating until fluffy. Add eggs, while beating.

2. In separate bowl, mix flour and baking powder.

3. In separate bowl, combine honey and orange juice.

4. Alternate adding flour mixture and honey mixture to batter in mixing bowl. Blend well. Add pecans and stir with spatula.

5. Pour batter into greased and floured loaf pan. Bake for 50 min. or until done. Cool on rack.
