Ingredients
- 1/2 cup butter (room temperature)
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 1 cup flour
- 1/2 tsp baking soda
- 1/2 tap baking powder
- 1/4 tsp salt
- 1 cup rolled oats
- 1/2 cup medium unsweetened coconut
- 1/2 cup gumdrops or more (baking fruitlets from Co-op), cut in half with kitchen shears
Preparation
Step 1
Combine softened butter with sugars, mixing well. Add egg and vanilla; mix. Add flour, baking soda, baking powder and salt. Mix well. Add rolled oats and coconut. Mix. Add gumdrops and mix in.
Pick batter up by teaspoons while forming the dough in rounds with your fingers. Drop on a greased baking sheet. Bake in preheated oven at 350F for 12-14 minutes. Cool on the baking sheet until easy to handle. Cookies will spread out to about 3" in diameter.
