Ingredients
- 1/3 cup mayonnaise
- 1 tablespoon lemon juice
- 2 teaspoons curry powder
- 1 1/4 pounds cooked medium shrimp cut 1/2" pieces
- 1/2 jicama peeled, and diced in 1/3" cubes - (abt 1 cup)
- Salt to taste
- Freshly-ground black pepper to taste

Step 1
In a large bowl, mix mayonnaise, lemon juice, and curry powder until smooth. Add shrimp and jicama; toss to coat evenly with dressing. Season to taste with salt and pepper.
