Cranberry-Ginger Pork Roast

  • 4 pound bone-in pork loin roast
  • 1 cup fresh or frozen cranberries coarsely chopped
  • 1/4 cup Atkins Sugar Free Pancake Syrup
  • 1 canned chipotle en adobo chopped
  • 2 teaspoons grated fresh ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly-ground black pepper

Step 1

In a small bowl mix cranberries, syrup, chipotle, ginger, salt and pepper. Place roast in slow cooker; rub with mixture. Cover and cook on low 8 to 10 hours.
