Mashed Potatoes w/ Shallots, Goat Cheese, and Herbs

Ingredients

  • 2 1/2 pounds round red potatoes (about 6 medium)
  • 2 teaspoons olive oil
  • 3/4 cup chopped shallot
  • 1 cup milk
  • 10 ounces soft goat cheese
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • Garnishes: fresh thyme sprigs, fresh parsley sprigs

Preparation

Step 1

1. Cook potatoes in boiling water to cover 35 minutes or until tender. Drain and let stand for 5 minutes. Set aside.

2. Heat oil in a large skillet over medium heat. Add shallot, and saute 4 minutes or until tender and golden. Set aside.

3. Heat milk in a small saucepan or microwave at HIGH 2 minutes or until hot; set aside. Mash potatoes with a potato masher. Add shallot, goat cheese, and next 5 ingredients. Add milk; mash well (mixture will be slightly chunky). Garnish, if desired.
