Ingredients

  • 1 lb. loaf good-quality white bread or baguette, cut into 1/2 inch cubes (10 to 12 cups)
  • 8 Tbs. unsalted butter
  • 3 cups 1/4 inch diced onion
  • 2 cups chopped celery (including inner leaves)
  • 1 clove garlic, finely chopped
  • 1 1/2 Tbs. chopped fresh thyme (or 1 1/2 tsp. dried)
  • 1 tsp. celery seeds
  • Pinch grated nutmeg
  • Pinch ground cloves
  • 1 tsp. freshly ground black pepper
  • 2 cups homemade or low-salt chicken broth

Put the bread cubes on a rimmed baking sheet and either leave them ont he counter to dry overnight or bake in a 275 degree oven, tossing occasionally, until dry but not golden, 30 to 35 minutes. In a 12-inch skillet over medium heat, melt half the butter. Add the onion, celery, garlic, sage, thyme, celery seeds, nutmeg, cloves, and salt. Cover and cook, stirring occasionally, until the onion is a soft, about 10 minutes. Set aside to let cool.

Heat the oven to 350 degrees. In a large bowl, toss the sauteed veggies with the bread; season with pepper. Melt the remaining butter. Brush the inside of a 3-qt. baking dish with some of the butter. Pour the remaining butter, along with the broth, over the dressing; toss well. Spread in the baking dish and cover with foil. Bake until heated, through, 20 minutes. Uncover and continue to bake until the top is crisp and golden, 20 to 30 minutes.
