BEST Fajita marinade!

Ingredients

  • Toppings:
  • 1/2 cup olive oil
  • 1/3 cup lime juice, fresh
  • 1/4 cup red wine vinegar
  • 1/3 cup onion, finely chopped
  • 1 tsp sugar
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp cumin
  • 3 cloves garlic, minced
  • 2 pounds flank or skirt steak
  • (can substitute chicken)
  • Flour tortillas
  • 2 onions, sliced
  • 3 green peppers, sliced
  • 1 red pepper, sliced
  • sour cream
  • salsa
  • guacomole
  • grated cheddar
  • chopped tomatoes

Preparation

Step 1

Combine first 10 ingredients (oil thru garlic) and stir well. Pound steak and put in ziploc bag with marinade. Refrigerate for 8 hours.

Saute peppers and onions in olive oil.
Remove steak from marinade and grill to desired doneness. Let rest 10 minutes before slicing into thin slices.

Serve with warmed tortillas and toppings of your choice.
