Spicy Chicken Chili

Very fast, easy low-fat weeknight dish.
Recipe calls for Salsa style canned tomatoes but can substitute regular.

Ingredients
- 4 skinless, boneless chicken boobs
- 1 can chunky/diced tomatoes
- 1-2 cans spicy chili beans (or med)
- 1/4 cup cheddar cheese shredded
- 1/4 diced onion
- 1/4 cup plain nonfat yogurt or fat-free sour cream
Preparation
Step 1
season and saute the chicken (s + P) or some cumin, until browned. Stir in tomatoes, undrained and the beans. Bring to boil, reduce heat to med-low. cook uncovered 8-10 mins. stirring frequently until chicken is no longer pink in the center. Srinkle each serving with some cheese, onion and a dollop of yogurt or sour cream.
