Grilled Caesar with Spicy Shrimp

Ingredients
- Dressing:
- 4 cloves garlic
- 1 can anchovies(drained)
- 1 lemon juiced
- 1 cup olive oil
- For the salad:
- 12-16 ounces shrimp
- olive oil
- salt and pepper
- 1 can chipotle in adobo
- 4 romaine hearts
- 1 baguette
- 6 ounces grated parmesan

Preparation
Step 1
Dressing:
Process all dressing ingredients until smooth.
Salad:
Clean and toss shrimp with olive oil, salt and pepper. Grill shrimp until pink. Marinate shrimp in chipotle for 30 minutes them remove and set aside.
Brush the romaine hearts with some of the dressing and grill lightly.
Grill the baguette and slice into large bite size pieces.
Assembly:
Halve the grilled romaine hearts and stack over a few croutons. Pour the dressing over the salad. Garnish with the grated parm, shrimp and plenty of cracked pepper.
