  • 3 Eggs
  • 2 Cups Sugar
  • 1 Cup Oil
  • 3 Cups Flour
  • 1 tsp. Salt
  • 1 1/2 tsp. Cinnamon
  • 4 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • 2 tsp. Vanilla
  • 1 (8 3/4 oz.) Can Crushed Pineapple, drained
  • 2 Cups Grated Zucchini
  • 1 Cup Chopped Walnuts
  • 1 Cup White Raisins, soaked in 1 Cup Boiling Water, drained

Step 1

Cream eggs, sugar and oil; sift flour, salt, cinnamon, baking powder and baking soda. Stir in vanilla, pineapple, zucchini; add nuts and soaked, drained raisins. Spoon into greased and floured Bundt pan. Bake at 350 degrees for 55-60 minutes. Pick test for doneness.
