- 4 medium ripe tomatoes diced (about 2 cups)
- 1/2 cup pitted green olives, sliced
- 1/4 loosely packed fresh basil leaves, , coarsely shredded
- 1/2 teaspoon kosher salt
- 1 cup drained fresh ricotta

Preheat oven to 375 degrees F. Brush the bread with 3 tablespoons olive oil, and place on a rimmed baking sheet. In a medium bowl, toss together the tomatoes, olives, basil, and salt. Drizzle with the remaining 3 tablespoons olive oil, and toss.
Mound the tomato mixture evenly on each of the bread slices on the baking sheet, and top each with ricotta. Bake until th
