Ingredients

  • Frosting:
  • 1 Cup BUTTER, softened (2 sticks)
  • 8 oz. Cream Cheese, softened
  • 6 Eggs
  • 2 Cups Sugar
  • 1 tsp. Vanilla
  • 3 Cups Cake Flour
  • 1/4 Cup Coconut Milk
  • 1/2 Cup Butter, softened
  • 8 oz. Cream Cheese
  • 1 tsp. Vanilla
  • 3 Cups Powdered Sugar
  • 1 Cup Coconut (you can buy toasted or toast it yourself under broiler)
  • Add a few tablespoons milk to make creamy.

Step 1

Preheat oven to 350 degrees. Mix together the butter, cream cheese and sugar. Mix in eggs one at a time, mixing well after each addition; add vanilla. Add the flour and continue mixing until well blended. Spray a 9" x 13" baking pan with non-stick spray and spread the batter evenly in pan. Bake for approximately 40 minutes or until it's fully cooked in center. Cool.
Frosting:
Mix together the butter, cream cheese, and vanilla. Add the powdered sugar. Add a little bit of coconut milk as the last step to get the consistency desired for spreading (about 3 tablespoons). Frost the cooled cake and top with toasted coconut flakes.
