Cup BUTTER, softened (2 sticks)
oz. Cream Cheese, softened
Cups Cake Flour
Cup Coconut Milk
Cup Butter, softened
oz. Cream Cheese
Cups Powdered Sugar
Cup Coconut (you can buy toasted or toast it yourself under broiler)
Add a few tablespoons milk to make creamy.
Preheat oven to 350 degrees. Mix together the butter, cream cheese and sugar. Mix in eggs one at a time, mixing well after each addition; add vanilla. Add the flour and continue mixing until well blended. Spray a 9" x 13" baking pan with non-stick spray and spread the batter evenly in pan. Bake for approximately 40 minutes or until it's fully cooked in center. Cool. Frosting: Mix together the butter, cream cheese, and vanilla. Add the powdered sugar. Add a little bit of coconut milk as the last step to get the consistency desired for spreading (about 3 tablespoons). Frost the cooled cake and top with toasted coconut flakes.
