Cajun Shrimp Stir Fry

Ingredients

  • 1 small zucchini, sliced
  • 1/2 med yellow summer squash
  • 1/2 med. red onion
  • 1 T olive oil
  • 1/2 lb uncooked medium shrimp, peeled and deveined
  • 1 tsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/8 tsp ppepper dash crushed red pepper flakes
  • 1 C hot cooked brown rice

Preparation

Step 1

- Stir fry zucchini, squash, and onion in oil for 2-3 min. until crisp-tender; add shrimp and seasonings; stir fry 3 n=min. until shrimp turn pink; serve with rice
