Thai Roll-Ups

Ingredients

  • Hoisin Dipping Sauce :
  • 12-16 Boston lettuce leaves
  • 8 ounces cocktail shrimp
  • 1 cup cooked shredded chicken breast
  • 1/2 cup finely chopped peanuts
  • 1/2 cup shredded coconut
  • 2 cups rinsed, drained, and dried bean sprouts
  • 2 limes, seeds removed, then finely chopped, rind and all
  • 4-6 small hot chiles, slivered
  • 4-6 slivered scallions
  • 1 cup fresh coriander sprigs
  • 1/4 cup commercially-prepared hoisin sauce
  • 1/4 cup rice vinegar
  • 2 Tablespoons fish sauce
  • 2 Tablespoons grated or minced ginger-root
  • 1 teaspoon sugar

Preparation

Step 1

Prepare the first 10 ingredients, and arrange on plates or a serving platter. Make the dipping sauce, and divide into small serving bowls. Ingredients of choice are piled atop individual lettuce leaves, rolled up, and dipped into sauce.
