Spinach and Noodle Casserole

Ingredients

  • 10 ounces frozen leaf spinach
  • 8 ounces wide egg noodles
  • 3 whole eggs
  • 1 1/2 cups milk
  • 1 cup coarsely shredded chedddar
  • 2 cups ricotta cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation

Step 1

Preheat oven to 375 degrees. Spread spinach over bottom of buttered 11-by-17-inch baking pan. Cover spinach with drained noodles. In bowl beat eggs and milk, add ricotta and shredded cheeses and seasonings. Blend well and pour over noodles. Bake for 35-45 minutes or until set.
