Ingredients

  • 2

    tablespoons olive oil

  • 1

    tablespoon finely chopped garlic (about 2 cloves)

  • 1

    tablespoon finely chopped ginger (can also be finely grated with a rasp grater)

  • One

    32-ounce box low-sodium chicken broth

  • 2

    tablespoons soy sauce

  • One

    9-ounce package frozen meat ravioli

  • 1

    cup packed baby spinach leaves, roughly chopped

  • 1/4

    cup thinly sliced scallions (about 2 stalks)

Directions

In a medium pot, heat the olive oil over medium heat, add the garlic and ginger and cook for 1 minute. Add the chicken broth and soy sauce and bring to a boil. Add the ravioli and simmer for 5 minutes. Stir in the spinach and cook for another minute to wilt. Ladle into bowls, top with scallions and serve immediately.
