Peanut Ginger Pasta

Ingredients

  • 2-1/2 tsp grated lime peel
  • 1/4 c lime juice
  • 2 Tbsp reduced-sodium soy sauce
  • 2 tsp water
  • 1 tsp sesame oil
  • 1/3 c creamy peanut butter
  • 2-1/2 tsp minced fresh ginger root
  • 2 garlic cloves, minced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 8 oz uncooked whole wheat linguine
  • 2 c small fresh broccoli florets
  • 2 med carrots, grated
  • 1 med sweet red peppers, julienned
  • 2 green onions, chopped
  • 2 Tbsp minced fresh basil

Preparation

Step 1

Place the first 10 ingredients in a blender; cover and process until blended.

Cook linguine according to package directions, adding broccoli during the last 5 minutes; drain.

Transfer linguini and broccoli to a large bowl. Add remaining ingredients. Add peanut butter mixture and toss to combine.

**I made extra sauce and it soaked right in.
