  • 3 c graham cracker crumbs
  • 2/3 c sugar
  • 2/3 c melted butter
  • 2 envelopes of unflavored gelatin
  • 1 c lime juice
  • 1/4 c cold water
  • 1 1/2 c sugar
  • 5 eggs lightly beaten
  • 2 tsp. lime zest ( finely grated peel)
  • 2 pkgs. cream cheese softened
  • 1/2 c softened butter
  • 1/2 c heavy cream

Step 1

. Combine graham cracker crumbs, 2/3c sugar, 2/3c melted butter to make crust, and line the bottom of baking pan, bake for 15 minutes at 350 degrees (optional)

. Bloom the gelatin by shaking it evenly over the cold water and lime juice ( in a sauce pan ) next turn the heat on medium

. Stir in the eggs, sugar, and lime zest heat until 160 degrees (lightly thickened)

. Beat the cream cheese and butter together until fluffy, add the lime and egg mixture, beat until combined

. Pour batter into the prepared graham cracker crust and chill immediately, chill until set
