Spinach Lasagna

Ingredients

  • 2 tablespoons butter
  • A drizzle of olive oil
  • 1 med onion
  • s & p
  • 3 cloves of garlic
  • Lots of different kinds of mushrooms
  • Some thyme
  • Some rosemary
  • **Bechamel**
  • 5 tablespoons of butter
  • 1/2 c flour
  • 4 c of milk
  • some nutmeg
  • 2 c smoked mozzarella
  • 2 c jack cheddar
  • 8 cooked lasagna noodles

Preparation

Step 1

1. In a saute pan, add the butter and the olive oil - once heated add the onions, garlic s&p.
2. Once the onions are translucent add your mushrooms, the rosemary and thyme.

**Bechamel**
1. Melt your butter in a pan - once melted add the flour (make a roux). To this add the milk...whisk until the mixture thickens up.
2. Add a bit of nutmeg. S & P.
3. Add to this some prosciutto and 1/2 the smoked mozzarella and 1/2 of the jack cheddar.

**METHOD**
1. In an oven safe pan - layer your lasagna noodles, spread out your mushroom mixture, then your sauce - then your lasagna - FINISH with the last of the lasagna noodles topped with the bechamel sauce and then the cheese.
2. Bake in the oven for 40 mins at 400 degrees.
