Caesar Salad*****

Making Caesar Salad is more of a process than recipe. Taste as you go, lemon, anchovy and garlic are all strong flavors, so adjust accordingly.

  • Romain Lettuce(wash- dry- chop)

  • Croutons & Parmesan Cheese

  • Dressing:

  • 4

    garlic cloves

  • 1

    can anchovies-I only use 2-3 filets

  • Vegetable Oil

  • 1

    tsp mustard

  • 1

    tsp Worcestershire sauce

  • 1

    T cider vinegar

  • 1

    Lemon- juiced

  • 2-3

    egg yolks


-Smash garlic & anchovies together. -Add mustard, Worcestershire, vinegar, juice and yolks. - Whip with fork of whisk, make sure you mix well. -Stream in oil as needed to reach right consistency, continue to mix while adding oil. -Season with S&P to taste. -Dress salad and add croutons and Parmesan .
