Ingredients
- Cupcakes:
- 1/2 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 tsp. pure vanilla
- 1 1/2 cups flour
- 1/2 cup cocoa powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup buttermilk
- 1/2 cup boiling water
- Frosting:
- 6 tbsp butter, softened
- 1/2 - 1 tsp vanilla
- 2 cups powdered sugar
- 1-3 tbsp milk (or more if you like a thinner glaze
Preparation
Step 1
Preheat oven to 375
Prepare 2 cupcake pans.
In a large bowl, cream together the butter, sugar, egg and vanilla. Add the dry ingredients alternating with the buttermilk. Stir in boiling water and mix well. Fill the cupcake cups 2.3 full. Bake for 20-25 minutes. Remove from oven and let cool completely before frosting.
For the frosting:
Combine the butter, vanilla, powdered sugar and 1 tbsp milk. Beat well. Add more milk if necessary to reach your desired consistency. Frost the cooled cupcakes.
