Ingredients
- 450 g ripe banana, mashed
- 100 g butter
- 100 g brown sugar
- 225 g flour, sifted
- 1/4 tsp salt
- 1 tsp cinnamon
- 1 tsp bicarbonate of soda
- 1 egg
- 45 ml natural yoghurt
- 1 tsp vanilla essence
- walnut pieces, pecan nuts, raisins
Preparation
Step 1
Stir the yoghurt into the mashed bananas.
Add thre vanilla.
Prepare a 1lb. loaf tin with greaseproof paper, butter and flour.
Cream the butter and sugar.
Add the egg.
Beat this into the banana.
Sieve the dry ingredients together.
Fold them into the banana mixture.
Mix in the nuts, etc.
Bake at 180 for about 1 hour or until the needle comes out clean.
Cool in the tin on a rack.
