  • 3/4 cup (175 mL) skim milk
  • 1 Tbsp (15 mL) fresh lemon juice
  • 3/4 cup (175 mL) dark brown sugar
  • 1/4 cup (60 mL) oat bran
  • 1/4 cup (60 mL) Kellogg's All-Bran Buds
  • 1/4 cup (60 mL) wheat bran
  • 1 omega-3 egg
  • 1 1/2 cups (375 mL) mashed ripe banana (about 4

  • 1 cup (250 mL) whole wheat flour
  • 3/4 cup (175 mL) ground flaxseed
  • 1/4 cup (60 mL) walnuts, finely chopped
  • 2 Tbsp (30 mL) cinnamon
  • 1 1/2 tsp (7 mL) baking powder
  • 1 tsp (5 mL) baking soda

Preparation

Step 1

1. Preheat the oven to 400'F (200'C). Line a muffin pan
with papers cup liners.

2. In a large bowl, mix together the skim milk, lemon
juice, brown sugar, oat bran, All-Bran Buds, and
wheat bran. Let sit for 5 minutes. Beat in the egg
and mashed bananas.

3. In a medium bowl, using a fork or a wire whisk, mix
together all the dry ingredients.

4. Pour the dry ingredients into the wet ingredients
and mix until well combined.

5. Scoop into muffin cups. Bake for 20 to 25 minutes or
until done.
