Stir-Fried Garlic Shrimp

Ingredients

  • 2 tsp. vegetable oil
  • 1 pound uncooked, peeled, deveined medium shrimp, thawed if frozen
  • 2 large cloves garlic, finely chopped
  • 3 cups sliced mushrooms (8 ounces)
  • 1 cup 1-inch pieces green onions
  • 1/4 cup dry white wine or reduced-sodium chicken broth
  • 2 cups hot cooked rice

Preparation

Step 1

Heat oil in 10-inch nonstick skillet over medium-high heat. Add shrimp and garlic; stir-fry 1 minute. Add mushrooms, onions and wine; stir-fry about 2 minutes or until shrimp are pink and firm and vegetables are hot. Serve over rice.
