Cheese Blintzes

Ingredients
- Batter:
- 4 eggs, beaten
- 1 C flour
- 1 tsp salt
- 1-2 C milk
- Filling:
- 2 lb. farmer cheese (4 pkg.) [can also use "dry cottage cheese"]
- 1 egg (or 2)
- 1 Tbs butter
- 1/4 C sugar

Preparation
Step 1
Add 1 C milk to salt and eggs; stir flour in gradually until smooth.
I usually find batter is too thick and add about 1/4 to 1/3 C more
milk. Grease skillet with buttered paper each time before frying
leaf. Use vegetable serving spoon to fill skillet - tip the pan from
side to side until pan is evenly covered. When bottom is lightly
brown, I tip pan over waxed paper with brown side up.
Filling:
Stir all ingredients together- taste and adjust if needed. Roll in
leaf, tucking in sides of leaf. Fry in butter. Serve with sour
cream.
