Ingredients

  • 1 envelope Knox gelatin
  • 1 Cup cold water
  • 3/4 Cup mayonnaise
  • 2 T horseradish
  • 2 3oz packages of Lemon Jello
  • 1 1/2 Cup boiling water
  • 3 T vinegar
  • 1/2 tea salt
  • 1 1lb can diced beets
  • 1 1/2 Cup finely chopped cabbage

Preparation

Step 1

Softer gelatin in water, stir over low heat till dissolved. Cool. Combine mayonnaise and horseradish. stir in gelatin.
Pour in 1 1/2 qt mold, chill till firm.

Drain beets ( add water to make 1 1/4 Cup)
Dissolve lemon jello, salt in boiling water. Add beet juice and vinegar. Chill till almost thick.
Stir in beets and cabbage.
Pour over 1st layer.
Chill till firm.
