Sweet and Spicy Meatballs with Mango Salsa
Ingredients
- recipe for Mango Salsa:
- 1/3 c whole milk
- 1/3 c fine bread crumbs
- 8 slices bacon, chopped
- 1 medium onion,finely chopped
- 2 T minced garlic
- 1 T Worcestershire sauce
- 1 tsp. ground cumin
- 1 tsp. crushed red pepper
- 1/2 tsp. dried thyme, crushed
- 1 1/2 lb ground beef 80% lean
- 1 lb ground pork
- 2 eggs
- 1/4 c snipped fresh flat-leaf Italian parsley
- 2 T olive oil
- In med. bowl combine 3/4 c chopped fresh mango,1/4 c chopped red pepper, 3 sliced green onions, 2 T olive oil, and 1 T minced shallot. Season to taste with salt and pepper

Step 1
1. Preheat oven to 350. Line shallow baking pan with parchment paper. Set aside
2. In large bowl combine milk and bread crumbs, set aside. Meanwhile in a large skillet cook bacon over med heat until crisp. Transfer to paper towels reserving 2 T drippings in skillet
3. Add onion and garlic to skillet. Cook and stir 2-3 min. Add Worcestershire sauce; deglaze pan by scraping up any browned bits from the bottom.
4. Add cumin, crushed red pepper and thyme cook 1 min. more. Add onion mixture to soaked bread crumbs, mix thoroughly. Season with salt and pepper
5. Add beef, pork, bacon, eggs and parsley to bread crumb mixture and mix with hands. Shape into 2 inch meatballs. Place on prepared pan and Brush with olive oil
6. Bake 22 to 25 min. or until cooked through. Serve with Mango salsa
