Peanut Brittle

Ingredients

  • 2 c. sugar
  • 1 c. corn syrup
  • 1 c. water
  • 2 c. raw peanuts
  • 1/4 tsp. salt
  • 1 tsp. butter
  • 1/4 tsp. soda

Preparation

Step 1

Combine sugar, water and syrup in heavy skillet. Cook slowly to 238 degrees (soft ball stage), stirring constantly. Add peanuts and salt; cook to hard crack, 300 to 310 degrees. Remove from heat, stir in butter and soda; mix well. Mixture will bubble. Pour quickly on well-buttered cookie sheet. Break in pieces when cold.
