Marinated fresh Tuna with black beans

Ingredients

  • 2 lbs. tuna
  • 2 T. corn oil
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1/2 tsp. dried, crushed red peppers
  • freshly ground black pepper
  • 1 1/2 cups black beans, soaked overnight
  • 1/4 c. corn oil
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 2 tsp. crushed red peppers
  • 1 1/2 tsp. ground cumin
  • 1 1/2 tsp. ground coriander
  • 3/4 cup chicken stock
  • salt, to taste
  • 1/4 cup chopped fresh coriander

Preparation

Step 1

Cut the tuna into 4 even sized pieces.
Set them in a roasting pan and coat them with the oil.
sprinkle them with the spices
Refrigerate the tuna until 10 minutes before the beans are finished cooking
Light the charcoals for grilling the fish.

Drain the beans and combine them in a saucepan with cold water to cover.
Bring to boil, lower heat, let simmer 15 minutes.
Drain in colander.
Heat oil in flameproof casserole, cook onion, garlic, red peppers for a few minutes until the onion softens.
Add beans, cumin, coriander, stock and salt, bring to boil.
Lower heat, cover pan, let beans simmer gently, stirring occasionally, for an additional 10-15 minutes or until they are cooked through nut not falling apart.

While beans finish cooking, grill tuna
Stir fresh coriander into black beans, taste for seasoning and add more cumin, coriander or crushed red pepper to taste.

Divide the tuna among 4 plates and garnish with black beans.
