QUESO MANCHEGO EN ADOBO

Ingredients

  • 1 lb 4 month aged Manchego cheese
  • 2 TBS capers, drained and rinsed
  • ½ green bell pepper, seeded and chopped
  • 1 small yellow onion, peeled and chopped
  • 1 TBS chopped flat leaf parsley
  • ½ cup sherry wine vinegar
  • 1 tsp sea salt
  • 1 tsp chopped garlic
  • ¾ cup fruity extra-virgin olive oil
  • ½ tsp ground black pepper
  • 1 *1 cup pitted manzanilla olives (not stuffed), sliced
  • ½ cup roasted red peppers, drained and chopped

Preparation

Step 1

1. Remove rind from cheese; cut cheese into 1 inch cubes (I do ½ inch cubes)
2. Combine cheese and remaining ingredients in a large bowl; mix well. Marinate at room temperature for 30” before serving. (Or cover and refrigerate for one week.)
