Truffled Cream Gravy

Ingredients

  • 2 tbsp pan drippings or bacon grease
  • 3 tbsp flour( you can use the seasoned flour from chicken-fried steak recipe
  • 1 1/2 cups milk
  • 1 cup beef broth or veal stock
  • 1 tbsp fresh or canned black summer truffle(finely chopped)or truffle oil
  • salt and pepper

Preparation

Step 1

Remove all but 2 tbsp of oil from the skillet in which steaks were fried.Heat on medium,and whisk in flour,stirring for a couple of min.until completely combined and lump-free,making a roux.Add milk and beef broth,still whisking continuously.Continue heating until desired thickness is achieved,then fold in truffles and salt and pepper to taste.
