Sandy's Eggplant Dip

Ingredients

• Roast at 400F for 45 min
• 2 red pepper
• 1 eggplant
• 1 red onion
• 2 coves garlic
• 3 T olive oil
• 1 1/2 t salt
• 1/2 t black pepper
• Put everything in the food processor and add 1 T tomato paste.

Process with 1 T tomato paste
