Grilled Turkey

  • Lemon Rosemary Marinade:
  • 1/2 cup olive oil
  • 1 tbsp fresh rosemary, chopped
  • 2 strips lemon zest
  • 1 cloves garlic, halved
  • 12-16 lb turkey

Preparation

Step 1

Combine marinade ingredients and allow to stand for about an hour for flavours to mingle.

Rub inside and out with cut lemon, season with salt and pepper. Rub all over with marinade and brush a little in the neck and breast cavities.

Put some aromatic seasonings in the breast cavity: onion, celery stalks and leaves, garlic cloves, a cut lemon, sprigs of fresh or dried thyme,rosemary, sage or marjoram.

The prepared turkey may be placed in a roasting pan, loosely covered with plastic wrap, and left in the fridge for 3-4 hours.

Remove from fridge about 30 min. before cooking. preheat grill to high. Place large drip pan on top of one of the burners. When heated turn off burner under the pan. Put the turkey, breast side up, in the middle of the lightly oiled grill above the drip pan and close lid. maintain a constant temp. of about 325. Cook until done, about 2-2 1/2 hours. Juices should run clear, or instant temp. of 170.

Remove turkey from grill, and tent for at least 15-20 min.
